I made a batch of the baked oatmeal: baked it in a square glass dish. Cut it into 6 large, thick pieces and it came out to around 330 per piece. (but, i did use 6 tbl of pb instead of 8)

I've been making it since then and make a few modifications:
    - leave out brown sugar and use splenda
    - use coconut oil instead of butter (or a combo of both)
    - use 6tbl of natural, unsalted PB (the recipe calls for 1/2c which is about 8bl)
    - use 4 egg whites instead of 2 whole eggs
    - use unsweetened almond milk instead of milk
and on my last batch... I added a heaping scoop of chocolate protein powder and added 2 extra ounces of almond milk.

The baked oatmeal is really good warm and in a bowl with almond milk. But, I also love just taking a cold bar of it right from the fridge!

My last batch with the protein powder added:

    6 large thick pieces
    338 calories, 26 net carbs, 17g fat, 18g protein, ONLY 2g sugar, 6g fiber

    * it does look high in fat. but, remember, that's 1 full tbl of PB in each serving. 14g of healthy fats just from the PB.
