Korean Soondubu Soup

Here's a DELICIOUS soup recipe - I made it for my husband (who's Korean) a couple times now and he LOVES it (I do too!).
Ingredients:
1 tablespoon sesame oil
A couple tablespoons of garlic
2 tablespoons Hot Pepper Paste (Gochujang)
2 tablespoons Hot Pepper Powder
1 bunch of enoki or shiitake mushrooms
about 7 oz of low-sodium veggie broth
1 package of silken tofu and a fifth of a package of firm tofu
3 to 5 chopped kale leaves or 2 cups of spinach (depending on your preference)
Handful of dried nori (seaweed) [optional: it will give it more of a fishy flavor - husband loves it, but I don't.]
Pour about 1 tablespoon of sesame oil into pot. Add garlic and sautee. Then drain the tofu and place into pot w/ 2 heaping tablespoons of hot pepper paste. Mix tofu up breaking it into bits and mixing w/ hot pepper paste. Add just enough veggie broth to cover the tofu. Add 2 tablespoons of hot pepper powder for a more spicy flavor. Allow mixture to boil. Wash mushrooms and cut off the ends. Add mushrooms and kale/spinach just at the end and allow greens to wilt. Top with [optional] nori flakes. Serve alone or with rice.
