I did them this morning...and my husband loves pancakes, so I was hoping they wouldn't disappoint him. I put blueberries and raspberries in. They were AWE.SOME. He wants me to do them again. So light and fluffy and delicious!

eh. it was pancake-y, but i think i messed it up by putting just a little protein powder in it. i put one scoop in my 1/2 cup then topped it with flour. idk. it wasnt fluffy like some said. it was hard to cook because of the way it stuck and thickness. the ouside deflates when it leaves the stove and the inside was gummy no matter how long i cooked it. i still ate it. it wasnt that bad, just not even close to regular pancakes.

I have a protein pancake recipe that includes a scoop of protein powder and I hate it. So, yeah, I'm thinking it's the powder that messed it up for you. I suggest making it again without it. It really is amazing and 10 times better than any store bought mix!

Well, mine didn't come out looking like the picture, LOL. The consistency was too thick, so the middle didn't cook fast enough. I did use oat flour instead of regular flour but I wouldn't have thought that would make a big difference. They were still pretty good though, and very filling. I might try diluting them with milk next time.
