My "Baked Pumpkin"

My favorite food EVER --

1 can pure pumpkin
1 cup egg whites
2 tablespoons splenda
cinnamon
pumpkin pie spice

Mix together above ingredients in a bowl and then portion into 4 tupperware containers. When ready to eat, sprinkle in a bit of baking soda (and some mini chocolate chips if you'd like), mix, and then put in the microwave for 2.5 minutes. When it comes out, crush a graham cracker overtop, drizzle some Walden Farms caramel syrup, 2 tablespoons Fat Free Cool Whip, and a final dash of pumpkin pie spice. 140 calories (without the chocolate chips) and soooooooooo filling and yummmmyyyy.
I literally eat this everyday. I'm a huge pumpkin pie fan and this totally satiates my sweet tooth!

    I'm not much of a cook so do you know why the baking soda is needed? Just wondering if it is a deal breaker. Too much sodium in it for me so I don't want to try this and wreck it without it.
