Hi has anybody got any ideas for a low cal vegan dinner?

    A quinoa pilaff with a colourful variety of veg - red peppers, mushrooms, courgettes.

    Puy lentils made into a lasagne filling. Or as a salad dish with some tomatoes and vegan cheese.

    Chop sweet potatoes, onions, and squash (I use yellow & zucchini a lot) into 1-1.5" chunks. Drizzle in olive oil, toss in some crushed garlic & spices (I like rosemary & black pepper, but to each their own), then spread out single-deep in a baking dish/pan. Bake at 400 for 30-45 min (depending on how soft you like your veggies) -- it's delicious.

    Also, the McDougalls have a cookbook out that I find absolutely indispensable when pressed for time - it's on Kindle, and even if you don't have one you can download the reader for free from Amazon and read any Kindle book on your laptop (or even smartphone) if you have 'em -

    Some of my favorite veg cookbooks are How It All Vegan, Vegan Planet, and Skinny ***** In The Kitch. Also be sure to check out the websites for Post Punk Kitchen, The Vegan Stoner, and Vegan Dad. They all have lots of great ideas. Dinner tonight is Hummus, Tempeh and Cucumber wrap from the "...In The Kitch" book (you can find that recipe online)...yummmmmmmmmmmm.

    I was going to suggest this as well. Her stuff is fabulous.

    As a favourite vegan dinner, I like brown rice and red lentil dal. So good!

    http://www.dirtygourmet.com/ This website has both meaty and vegan meals, so you check the ingredients before you get excited about a recipe (I always get excited about making something from my childhood only to find it is something from my childhood and I cannot eat it). I love there recipes because they are generally for camping which means they are quick, easy, and use pretty normal ingredients. Also fun for when you have a crowd. If you get a chance try their vegan tuna salad; to die for and super easy to make plus low cal (I figure 1/4 cup is a serving and each serving is 120 calories)!
