I had fried whitemeat turkey no skin, a mashed sweet potato with mini marshmellows melted on top and 2 rolls. I ate waaayyyy too much pumpkin pie though. We did take a 1 mile walk last night but I still feel stuft and bloated. Cindy

    turducken
    butternut squash casserole
    green bean casserole
    cornbread stuffing
    mashed potatoes
    gravy

How was the turducken? We almost got one....freshly boned at the Delaware Market (they have a farm a few miles away) Instead we had a fresh, organic turkey that was out of this world!!

I love reading this thread because of the varied traditions we all have. It's interesting the way other folks do it

I have to say the same, compared to last year, I didn't gorge, but still felt it when I got done. My family prepared

    Herb-Brined turkey
    english pea cass.
    green bean cass.
    sweet potato cass.
    summer squash cass.
    pistachio salad
    cornbread dressing
    giblet gravy
    crescent rolls
    cranberry sauce
    pumpkin pie
    pecan pie

And for hor d'ourves spinach dip tucked inside Haiwiian bread.

And I had one of everything, no seconds. And did a very fast 3 mile walk in the morning.

And I am very thankful for everything I have in my life.:flowerforyou:

Didn't really gorge, but had too much and too much left over, also. The best dish was roasted delicata squash and sweet potato with some dried blueberries and bacon bits. Next year, store -bought dip and desserts, only 1 package of rolls, and no pistachio salad because no one ate any except me.

Someone asked for the Turtle Pumpkin Pie recipe, so here it is...it was delicious, but rich enough that a little goes a long way.

    Turtle-Pumpkin-Pie-54353.jpg

1/4 cup plus 2 Tbsp. caramel ice cream topping, divided
1 HONEY MAID Graham Pie Crust (6 oz.)
1/2 cup plus 2 Tbsp. chopped PLANTERS Pecans, divided
2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
    1 cup cold milk
    1 cup canned pumpkin
    1 tsp. ground cinnamon
    1/2 tsp. ground nutmeg
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided

POUR 1/4 cup caramel topping into crust; sprinkle with 1/2 cup nuts.

BEAT dry pudding mixes, milk, pumpkin and spices with whisk until well blended. Stir in 1-1/2 cups COOL WHIP; spoon into crust.

REFRIGERATE 1 hour. Top with remaining COOL WHIP, caramel topping and nuts just before serving.

*I actually made mine the day before, hoping that the added time in the fridge would help it set better, but it still didn't do what I had hoped. Freezing it for a little while might help.

I had a salad for thanksgiving. And then i enjoyed some yummy peach cobbler. That was it for me to be honest. My family didn't have time to cook a meal so I was carted to Golden Coral. This would be why I only had a salad. I took one look at the place and just didn't even feel that hungry, that and seeing some of the people there killed my appetite as well. It's so easy to see how America is facing such an obesity epidemic when you walk into places like that.

I anticipated the types of foods that I would have access to on thanksgiving. So, I wanted to be prepared. I ate a bowl of Amy's vegan chili (this stuff is awesome!) and some Tofutti "ice cream". I did snack on some candy, pineapple, strawberries, and more chili!! I know this doesn't sound like a lot, but if I gave into all the thanksgiving type food, I know I would have overdone it LOL. It was surprisingly not very difficult for me. However, I think it's important not to beat yourself up over eating too much or more than you normally should. We are human and over indulging is what thanksgiving is all about. I'm glad you had a nice holiday :)
