Roasted Rhubarb Heaven

Picked a couple of stalks of rhubarb from the garden this afternoon.
Washed and chopped in to 2 inch chunks.
Placed in an earthenware dish.
Sprinkled over 2 tea spoons of white suger and a tiny bit of freshly squeezed orange juice.
Covered in foil and roasted at 180 for 15 minutes.
Consumed and enjoyed. Heavenly.
Would have been even better with a dollop of low fat yogurt or creme fraiche but I forgot to buy some.
Really enjoyable low cal, tasty pudding.
