Zucchini Fries!

Want (Zucchini) Fries With That?
Ingredients:
1/2 cup seasoned dry bread crumbs
1/8 teaspoon ground black pepper
2 tablespoons grated Parmesan cheese
2 egg whites
2 medium zucchini, cut into 3-inch sticks
Directions:
Preheat oven to 475 degrees F. Combine bread crumbs, pepper and Parmesan cheese in a small bowl. Place the egg whites in a separate bowl. Dip zucchini into the egg whites, then coat with the bread crumb mixture. Bake for 5 minutes, then turn over and bake for another 5 to 10 minutes, until browned and crispy. Serves 4.
Per serving: 89 calories, 1.3 grams of fat, 13 grams of carbohydrates, 1.8 grams of fiber and 6 grams of protein.

ha! my husband (feeling inspired) tried to do his own zucchini fries a couple weeks back. he did not coat them and they were all limp. tasty but not fries. i am giving him this recipe to try again. thanks. -katie0 -
