Spinach and Feta Cheese Mini Quiche

These can be refrigerated or frozen, then pulled out as needed for a nummy breakfast or snack.

Prep time: 5 minutes.
Cook time: 20 minutes.

Ingredients:

5 eggs
1/2 cup 1% milk
1 cup spinach
1 cup feta cheese crumbles
spices as desired (I used garlic and onion)

Directions:

Preheat oven to 350 degrees.

Grease up a muffin pan (I used Pam for baking)

Put eggs and milk in blender. Blend. Add spinach, cheese and spices. Blend (not for very long, just long enough to get it mixed.)

If you don't have a blender, beat the eggs and milk with a fork until the mix is completely yellow and smooth. Rough chop the spinach and add it and the feta to the mixture along with spices. Beat with fork. When mixed, proceed.

Pour resulting mixture (It will be very green) into muffin pan. It will fill each a little over half full.

Pop in the oven for 20 minutes.

Yield: 12 delicious mini quiches. 2 quiche per serving for a total of 6 servings.

5 Carbs
6 Fat
11 Protein
1 Fiber
