recipe - bison Piñon

Years ago a friend from Puerto Rico gave me a recipe for Piñon. I was hungry for something substantial tonight, so I adapted what I remembered about the dish to things I had on hand.

Ingredients:

1 lb ground bison
1 red onion, sliced thin
2 plantains, peeled and sliced (these need to be very very ripe, with almost black skins)
2 jalapenos, seeded and chopped
2 Tbsp butter
2 eggs
1 bunch cilantro, chopped
12 oz baby spinach
juice of one lime

Method:

Melt the butter in a largish pot (large enough to hold the spinach). Cook the jalapeno for a few minutes, add the bison and brown. Add the plantains, then cilantro, then spinach. Cover and simmer until the spinach wilts. Fold the mixture a few times, then add the eggs. Cook 5-10 minutes folding every so often. Add the lime juice.

You can also add tomatoes, garlic, etc., there's no magic formula to Piñon.
