Burning muscle/burning fat.

I'm no nutritionist. I'm not completely out of it, but I don't know everything. How do I ensure that what I'm burning is fat and not lean muscle mass? I've seen stuff all over the internet about this. Workout at x time, eat x protein, etc. What really matters? Can I get some answers (and some simple ones ) so that I know how much of what to put into my body? should I eat more protein than mfp tell me to and less carbs? Should I work out before I eat? Is there a big difference?

Underneath the fat, I've always been a very muscular person. At 180-190-200 I was in a size medium shirt and people generally thought I was closer to 140ish. I want to try and retain and improve that all I can. I'm a healthy-fat person. At my fattest, I never had anything close to high blood pressure, diabetes, cholesterol, etc. because I actually got fat eating too much of a lot of healthy things.0
