spaghetti squash au gratin

1 medium spaghetti squash, cooked and scraped
1 onion, thinly sliced
2T butter (i'll use promise light)
1/4 t red pepper flakes
1t thyme
1/2c sour cream (low fat)
1/2c shredded cheddar (weight watchers 4 cheese blend)
salt & pepper

Brown onion in butter, add pepper flakes, thyme and salt & pepper. Add to squash and mix well. Next add sour cream and shredded cheese, mix well again.
Place in buttered (butter flavor pam) 13x9 dish and bake at 375 degrees for 15-20 minutes or until lightly browned on top.

    I used to eat this years ago on the Adkins diet....
    Yummy stuff

    the only difference was I would mix it all together and cook it in the squash shell.

    Could I sub the sour cream for cottage cheese? I dislike sour cream...

    Sounds so good, though! I have been experimenting a lot with spaghetti squash in place of pasta as well. Done soup and lasagna!
