Xylitol substitute?
I posted this in another area of the message boards and didn't get a response so I though I'd try here.
I'd love to make Jamie Eason's pumpkin protein bars but I can't find Xylitol locally and I'm not happy about paying $15.00 plus shipping for a 2lb bag.
Can it be made with a different sweetener? If so, what would you use?

You could try Stevia...Sweet Leaf Stevia is my fave and can often be found in local grocery stores. Warning: Wal-Mart carries a stevia brand in their pharmacy dept. I found this to be extremely bitter, but some may like it. Good Luck!0

The stevia at walmart has an odd aftertaste (and an odd "immediate taste," if that makes sense.)0
