use a potato peeler to shave cucumber into ribbons, add, vinagar, water, salt, pepper and basil to taste (easy vinagrette). The ribbon effect makes it look different and almost fancy, the flavours all come out wonderfully. You can also add fresh dill on top for a wonderful kick.

One cup peeled chopped cucumber, 1 cup blueberries lemon juice and yogurt and your fave milk or juice and some honey if you like or not and blend...I added a dash of nutmeg just because...I like it!

    Oh blend it all!

Actually, I just snacked on one tonight which was out of the ordinary for me. I bought these snack size Sabra hummus cups at Costco. They are about 140 cals per cup, I think. I sliced up a cucumber and dipped it into the hummus. I started getting full so quick that I could not finish the whole cuke. Great low cal snack and healthy to boot!

I put cucumbers in my sandwiches and also salads. I love having an Arnold 8 grain pocket thin (100 cals) with a 1/4 cup hummus, cucumber, green pepper, spinach and sometimes a dollop of fat free sour cream with salt and pepper. Sooooo good and good for you!

This is great. My garden is teeming with cukes, and I have no idea what to with them! I've been using them in my water. It helps me drink it.
