Actually, I just snacked on one tonight which was out of the ordinary for me. I bought these snack size Sabra hummus cups at Costco. They are about 140 cals per cup, I think. I sliced up a cucumber and dipped it into the hummus. I started getting full so quick that I could not finish the whole cuke. Great low cal snack and healthy to boot! :happy:

This is great. My garden is teeming with cukes, and I have no idea what to with them! I've been using them in my water. It helps me drink it.

Slice cukes thin, slice a small red onion as thin as possible and set aside. In a big bowl combine 1/2-3/4 cup red wine vinegar, 3 (not packed) tbsp of brown sugar, 1 tsp garlic, 1 cup warm water, 2 tbsp italian seasoning, salt and pepper to taste and 1/4 cup diced pimetoes. Mix well, drop in sliced cukes and red onion and let it sit for a few hours then dig in. You can keep adding to it for about 4-5 days then start a new batch. Works good with Zucchini and yellow straight neck squash too.0

Whenever we finish a jar of dill pickles, we save the jar and juice, slice cucumbers quite thin and put them in the pickle juice and put the jar back in the refrigerator. After only a couple of hours they are ready to eat. Very tasty. My teenage sons eat a whole jar at one sitting.0

What is "fat free" sour cream???? I avoid sour cream cos the best I can buy is low-fat & it still packs a punch as far as calories go!!!0

1/2 c low fat cottage cheese
1 tomato, diced
1/4 cucumber, diced
1/4 green pepper, diced
Mix together; add seasoned pepper and garlic salt (optional). This is great with Trader Joe's Multigrain Crackers.0 -

I slice them thin with a cheese slicer and add a bit of vinegar (rice vinegar is good but it's got sugar, my mom always used that when I was a kid to get us to eat it. LOL) + dab of balsamic and some red pepper flakes + sea salt. Yum!0

Hollow out a 2 or 3 inch section so you have a "cup"
fill with anything you'd like! Chicken salad, tuna salad, salsa, hummus, anything at all!

I slice cucumbers, tomato and a little bit of red onion or green onion, drizzle with some olive oil, and your favorite vinegar then sprinkle with a bit of dried parsley, salt and pepper and refridgerate for atleast 30 min.

Cucumber Mango Salsa
2 - 3 mango, peeled and diced.
1 cucumber, peeled, seeded and diced
1 red onion, finely chopped
1 clove garlic, minced
2 jalapeno peppers, seeded and chopped
1/4 cup chopped fresh Cilantro
1 tablespoon fresh squeezed lime juice (or to taste)
Finely chopped Parsley (to taste)
Freshly cracked pepper (to taste)
Salt (to taste)
Toss it all together and refrigerate. I find it tastes best sitting overnight but an hour or two should be fine. Tastes great on top of grilled chicken or with whole grain (low sodium) tortilla chips ..0 -

Dice up one tomato
Mince up two cloves garlic
Little bit of soy sauce
Dash of pepper
