As a warning to many people the first week of going low carb tends to such as Binkie said. Some people tend to get whats known as the Keto Flu. Its easy to turn to food when you are having a bad time. Its hard to be arsed to cook well when you feel like utter ****e and a takeaway is much easier. Im sure you will be fine though, if you have friends with similar goals it can be fun to challenge each other for motivation. Best of luck.

With healthier foods you can eat a lot more of them for fewer calories. So bear in mind you may be able to have 2 or three meals with large amounts of vegetables compared to one meal of fish and chips for a similar level of calories.

I have a fair bit more to lose than you. Since you are gaining muscle while cutting fat those last few pounds may not actually shift considering how much heavier muscle is than fat. Best bet is to acquire a scale as many have suggested. What I tend to do when I buy a bag of nuts is say I have 100gram bag I will split them into 4 rough portions so I know that they are roughly 25grams each. Its not perfect but I know its not gonna be to much of a difference either way.

You cant just loose fat on your belly you had to just lower your general fat level by loosing weight. Eat well at a calorie deficit and exercising should help.
