how about some grilled tomatoes? You really can eat whatever you like (within your calorie limits) and lose weight. The reason so many people recommend vegetables (aside from their nutritional benefits) is that they're low calorie and bulky so you get a lot of food for your calories.

That all depends on the serving size. I often make big chicken dishes and count each 1/2 chicken thigh as a serving so when I'm dishing up I just have to count the number of pieces of chicken I eat. 1/2 a chicken thigh would probably never be enough food for me but I do it to make my life easier when dishing up. that's just showing off! lol I cook very regularly, but not every night. I tend to cook a pot of something that will do a couple of nights and I do buy meals from the shops to cook at home if I know I'm going to have little time between work and the gym (I walk or run everywhere now which eats into my spare time a bit).

I weigh everything that I play a part in portioning. If it is pre-packaged I tend to trust that it will be fairly close (companies don't tend to give lots of food away for free).
