    Lol, me either! The only exposure I had to beets as a child were those jiggly looking slices that came out of a can. I keep telling myself I am going to try some roasted-everyone tells me how delicious they are. We'll see, lol.

    I usually peel, cut into large dice, then simmer them in chicken broth until done (the broth should be mostly evaporated by the time they're ready). Add a little bit of butter at the end to make a sauce. Very tasty!

    I pickle them. Use them as a side dish, or in salads or anytime I feel like eating them.

    I'll reduce the water that my beets are boiled in and use the concentrate to make risotto as well as some of the pureed beets. To the water I usually add star anise and other spices for flavor.

    Yes. Beet greens are very nutritious.
