1/2 cup of pumpkin puree
2 egg whites
2 packets of stevia and cinnamon
Then just mix, and they taste awesome!0 -

What is the leavening in this? Or does the blending take care of that?

I've done something similar with pureed cooked carrots - you can either bake them or make them like pancakes - 1 egg, 3 oz carrots, sweetener & cinnamon (I generally use pumpkin pie spice)0 -
I've tried several of these recipes that float around the forums and other websites. I find them all less than adequate. I don't think there is anything wrong with real pancakes, eaten in moderation. I make whole wheat ones with blueberries on the weekends.0

I do something similiar. 2 bananas mashed. 2 eggs. 1/8 tsp or less of vanilla (just a little to add pizzazz, 1/8 tsp of cinnamon (just one shake really)....
Mix them up. Put them on a griddle or in a skillet and make like pancakes..
Sometimes I add Enjoy Life Mega Chunk Chocolates (1 tbsp).
Without the chocolate, each serving is 271 calories (2 pancakes). With chocolate, 311 calories per serving.
This recipe makes 2 servings of 2 pancakes each.
They are delicious.

My recipe:
1/3 cup oatmeal
3 egg whites
1/3 cup low-fat, no salt added cottage cheese
1 tsp. vanilla
1 tsp. honey
1 scoop vanilla whey powder
I blend it in the blender. Easy Peesy.0 -
I tried the oatmeal version this morning topped with peanut butter...loved it! Will be trying the pumpkin version tomorrow0
