    Well I had sworn off corn for awhile but today I had some and remembered to chew well.

    What you're seeing in the toilet bowl is the cellulose shell of each corn kernel. Humans can't digest that portion of the kernel, so it just passes undigested into our poo. We digest everything that was once held inside that kernel, though. So you still have to log the corn to account for all the sugar and starches that your body digested when you ate that corn.
