I use a similar recipe as a base for all kinds of meatballs!
finely minced Shitake/Portabella mushrooms
tomato paste
soy sauce/liquid aminos/coconut aminos/fish sauce
shredded zuchinni
shallots/onion/green onions
use a ground beef/pork/chicken or mixture in place of turkey
I always double the batch of whatever variation I make and freeze half!0 -

I made these yesterday. They were very good. I made two batches. Only substitute I would make next time...less salt. These will be my snack for the week. Came to 31 cals per for me.0

Oh my. I made these yesterday with the ingredients I had on hand - 1/2 an apple, carrot chunks (versus grated), some chicken seasoning, a bit of parsley, the ground turkey and a bit of salt and pepper. They were great! I liked that the carrot chunks were present. It was a really nice difference in texture. I worked out a recipe so that I had four small meatballs, some homemade stewed tomatoes and spaghetti for about 250 calories. It was a really tasty lunch. Thanks for the suggestion!0
