Low Carb Meals

I I need low carb meals that are easy and kid friendly. I have been just been told my son is Type 1 diabetic.and we could all use a diet change....any tips would be helpful

My daughter is type 1 DM. They can eat regular, healthy. You just adjust the insulin depending on the amount of carbs they eat for that meal. Low carb snacks are beneficial so they don't have to use insulin all the time.
