Tomatoes from my plants outside. :)

    Then fresh-picked broccoli.

Wait, I guess tomatoes are technically fruits.

I like lots of veggies, but I think everyone should know that roasted cabbage is amazing! A little olive oil, salt and pepper and an oven. Yum.

My new favorite is fresh green beans cooked al dente with bacon, onions, garlic and cracked pepper.

I fry it all up in some of the bacon drippings after it's been cooked.

I used to hate green beans.

It used to be broccoli. I ate a gigantic bowl of cooked broccoli with butter spray and hot sauce every day after work and that is all I ate for dinner. Now I can't stand the stuff. But, I do love spinach. I put frozen spinach that has been defrosted and drained(squeezed) mixed with 6 egg whites and 1 ounce of cheese and cooked on the stove.. I eat it with salsa. Its kinda like a frittata I think. I have eaten this for breakfast for many years and never tire of it. I like fresh spinach or non-iceberg lettuce in a salad or wrap.

    soooooo many! I love vegetables!

I love roasting brussel sprouts with a little balsalmic vinegar and yellow mustard.

I also love baked sweet potato. Recently used this recipe:

4 cups up cooked sweet potato sliced into rounds
    5 tbsp agave nectar
    1/8-1/4 tsp ground cinnamon
    1/8 tsp salt
    2 tbsp coconut oil

Mix the ingredients together and bathe the sweet potato slices in them. Bake at 350 degrees for 40 minutes or so. SO DELICIOUS!
