Define "low carb"? To me that means between 20 and 40 grams of carbs each day. On a plant-based diet that's going to be pretty tough. The poster above who is eating 80 grams per day on a vegetarian diet (including dairy) would disagree, especially since 80 grams is working for her.
You may also need to define "vegetarian" since I've seen different variations either including or excluding dairy, etc.0 -
I ate low carb high fat for 6 months as a vegetarian. I ended up eating meat, but I do think eating low carb high fat as a lacto-ovo vegetarian is possible and can be tasty and healthy. I like lots of different ethnic foods, so I ate thai curries with lower carb vegetables, saag paneer, paneer butter masala, eggplant curry with no potatoes, paneer capsicum. When I went for barbecues, I cooked halloumi cheese and lots of grilled veggies marinated in an oily dressing. I ate lots of salads with dressing. Chili with black soybeans (http://www.dummies.com/how-to/content/lowcarb-black-soybeans.html) is also good. Breakfast was mostly eggs or smoothies with full-fat coconut milk and lower carb berries, like frozen raspberries. I also admit I ate lots of cheesecake made with sweetener. Oh, and "not potato" dishes made with cauliflower - "potato" salad, mashed "potatoes", etc. I make the occasional pizza - I like this crust http://eatfatlosefatblog.com/low-carb-holy-grail-almond-flour-pizza-crust/ with garlic butter, spinach, and goat cheese.
Anyway, I suggest thinking of foods you eat now and foods that you like and googling the recipe name or description with "low carb". You might find that there are alternatives that you haven't thought of.
Obviously, meat subs like tofurky sausages aren't carb-free like meat is, but if you read labels carefully, you can definitely find ones that fit into your plan.0 -
Even great sources of omega-3s generally have at most 1 or 2 grams of omega-3s per serving, which leaves a lot of grams of other stuff, and in most plant sources of omega-3s, a fair percentage of those other grams are going to carbs -- not the oils, of course. I like oils on things (salad, pasta, etc.) or to cook things, but I wouldn't want to build my meals around mostly oils.0 -

You can lower your carbs by cutting out bread, cereal, pasta, rice, quiona.
Get protein from beans, lentils, tofu, and nuts (almonds and macadamias are relatively low carb compared to other nuts.
This will not be "low carb" in the traditional sense.
Remember to eat fats and oils.
