What are your favorite ways to consume veggies?

So besides the obvious salad and stirfries, how else do you like to get your veggies in?

    Smoothies, soups, casseroles, wraps.

    My salads aren't always the lettuce variety. One favorite - shredded carrots, sliced celery, and (thawed) green peas....toss with Newman's Light Sesame Ginger dressing. Thawed French style green beans are good in this too.

    Here's a coupe weird ones (from childhood): orange jello with crushed pineapple and shredded carrots. Lime (or lemon) jello with shredded carrots, cabbage & diced celery. You can add a teaspoon of vinegar to cut the sweetness.

    Carrots and radishes dipped in hummus
    yellow (or green or red) coconut curry w/broccoli, cauliflower, red/yellow onions, bell peppers, etc..
    quiche: spinach, broccoli, and bell peppers are our favorites
    stir fry (as you mentioned)
    omelets
    any raw veggies dipped in something
    cauliflower mashed in potatoes (good for the finicky eater)
    artichokes dipped in a light mayo or a lemon juice mixture
    cabbage salads
    smoothies...adding spinach or kale changes the color, but not the overall taste in a large way
    your favorite meat sauce over a spaghetti squash
    spaghetti squash with a cheese sauce
    your stir fry over a spaghetti squash
    sometimes we steam broccoli, cauliflower, bell peppers, onions, a smoked sausage, and red potatoes
    sauteed zucchini and squash as a side
    soups

    This is our family's goal, to not just lose weight, but to be vegetable heavy and make them the focal point of the meal.

    I am baking my turnips, scalloped, in a cream sauce. Zucchini boats were a hit last year.

    Wrapped around other veggies and baked (sliced eggplant, sliced zucchini). As a pasta substitute for use with sauces or in lasagna-like dishes (ditto). Stuffed (summer squash, peppers, cabbage leaves). Pureed as the basis for soups or sauces (winter squash, cauliflower, sweet potato, the venerable tomato) or dips (nearly any veg). Sauteed and used as a base for scrambled eggs (anything, but especially greens & onions). But I'm vegetarian, and trying to minimize what I consider to be optional carbs (pasta, bread, and the like), so I like them almost any way.

    The roasting/grilling thing is great, too - I like them roasted, then put in salads, too, especially cauliflower, onions, garlic, or sweet corn.

    I boil and then grill/fry(w/o oil)mine so they don't have any remaining water in.
    I then eat them with yogurt. :)

    I love the steamer bags for convenience. I bought this Parmesan pesto sprinkle from a spice shop that is delicious. I usually sprinkle some of that on top and go to town.

    I love to steam my veggies and put a tiny bit of butter with some garlic powder on it. Yum!

    i usually ninja nutra blend them with some fruits, fruit juice & almond milk for i would not consume what i need every day without blending them.. other than that & the occasional quinoa stir fry, i like adding baby kale & baby spinach in cheese omelets the most.

    I love veggies cooked in any way just not over cooked!
    My favorite right now that I can't get enough of is tomatoes!!!!!
    It's the best time of year for them.
    I eat lots everyday cause soon they'll be gone.
    Greek salad is my fav!
    Tomato
    Cuke
    Peppers
    Red onion
    Chunks of feta on top!
    Dressed in virgin olive oil, red wine vinegar, salt/pepper and sometimes fresh oregano if available!
    Delightful!!!

    Oh, forgot sauteed in olive oil and garlic.

    I love to pan saute pretty much anything. Get a good sear on some of it and yum.

    Exactly all of this. Also shredded and added 50:50 with meat in meatloaf, meatballs, nuggets, burritos, mixed into chili, stew, casseroles.

    depends on the veg but i'll saute, pan fry, roasting is my favorite, etc.

    As far as preparation goes, I prefer grilled or roasted, occasionally sauteed. Rarely steamed (as I always feel they get mushier than I would like) and almost never boiled...

    I usually sauté my veggies in a pan just to get a little bit of color on them, then add a splash of chicken broth to the pan, cover, and let them steam until they're cooked to my liking. Salt, pepper, garlic powder, and cayenne or Old Bay seasoning.. yum! :)

    I eat most of my veggies either sauteed or roasted. I have a serving or more of vegetables at every meal.
