Puff pastry recipes?

I bought some frozen puff pastry sheets with the intent of making some strudels a couple weeks ago but I haven't found a good recipe yet and I'm not even sure what kind of apples I should use and I've been thinking of maybe doing something else...
So... any recommendation?

I recently saw a video of someone making these. They actually don't look that difficult and the end-result is amazing. Good luck if you try this.

Yeah, I definitely drooled and immediately thought about buying some puff pastry! I might try my hand at them and whip up a cream cheese drizzle to go over them.0 -

Honeycrisp apples are excellent for eating and baking.
I think Alton Brown is always the best place to start when making something new. Check out "Puff the Magic Pastry." It's on amazon and maybe Netflix. The online stuff is never very good quality and I didn't watch this all the way through, but here you go.https://m.youtube.com/watch?v=yw0WX6DRriA

For baking, I basically avoid Mac and Red and Golden Delicious, and have had good luck with everything else. Cortlands were my go-to baking apples for years. Granny Smith are a traditional baking favorite, but they can be on the tart side. I've been loving Honey Crisps lately. They are a dollar extra per pound at my farm stand.

Spanikopita and baklava are the main things I used to make with puff pastry. More recently I made http://www.epicurious.com/recipes/food/views/skillet-chicken-pot-pie-with-butternut-squash-51143240
They have you cook the veggies in a cast iron pan that you can then put in the oven to finish, but since puff pastry is not round, I would put it in a casserole dish closer in size to the pastry so as not to waste so much and not worry about having another pan to wash.
Also, they have you cook the kale way too long and the squash not enough - if I make this again, I'd cook the squash as directed and add the kale after the 10 minutes, so the squash cooks for longer while the kale is cooking.

I'd use marsala for the sherry because I have it on hand and heavy cream for the crème fraîche. (You can add yogurt or sour cream to heavy cream for better crème fraîche substitutes, but for this recipe I don't think it's necessary.)
