    I already posted this, but the croquettes are seriously good! If you want to make and save, just flash freeze (directly on a metal baking sheet) and transfer them to a freezer bag to eat over the next 4 months. Re-bake them to thaw/crisp when you're ready to eat.

    I freeze the meat and use it in any recipe that I'd use cooked chicken. Also turkey sandwiches (bread & mayo).

    The other thing I do is make a casserole with the leftovers: stuffing/dressing in the bottom, add chunked turkey, pour gravy over it, and top with mashed potatoes. Throw in the oven and bake until it's bubbly and the mashed potatoes begin to brown. You could add cheese as well.
