Healthy baking recipes using spelt flour or oatmeal?

I really want to get into healthy baking. I currently have old-fashioned and instant oatmeal as well as spelt flour and whole flaxseed. Any recipes are greatly appreciated!

    1 cup dry, 7 Grain Hot Cereal (old fashioned would work fine)
    1 cup (113g), All Natural Low Fat Cottage Cheese 1% Milkfat No Salt Added
    1 tsp, Vanilla Extract
    1 tablespoon, Ground flax
    2 Large Eggs

    1 cup, Low Fat Goat's Milk
    0.20 medium, Red Bartlett Pear
    0.20 tsp, Spices - Cinnamon, ground
    0.20 tsp, ground, Spices - Cardamom

    I mixed these, sliced the pear, and made pancakes. I bet it would bake well in a casserole dish instead. Use regular cow's, soy, or whatever milk you like. Whatever floats your goat, eh?
