I'm doing low carb too and have found (modified recipes I found online) a few recipes I like. One is for low carb cheesecake.
16 oz cream cheese softened
2 egg whites
1 tsp vanilla and lemon juice
3/8 c Splenda divided
2tbsp I can't believe it's not butter
1/4 c almond flour
1/4 c chopped pecans
1/4 c unsweetened coconut flakes
Start with the crust. Preheat oven to 375. Mix almond flour, coconut, chopped pecans, butter and 1/8 c Splenda. Press firmly into pan. Bake until toasted. Cool.
For filling mix the egg whites, vanilla, lemon juice, remaining 1/4 c Splenda until well incorporated then add to softened cream cheese. Poor into cooled crust. Bake at 350 for 30-45 minutes until the middle is furnish to touch but still jiggly. (Tip-I always add a pan of water to the oven to keep my cheesecake moist)
It's only 2.7 net carbs per serving! Makes 6 servings.0 -

Last week I got addicted to pizza 'tacos'. I fry the mozz cheese on both sides and then top with my favorite toppings. you could also just make 'pizza toppings' by layering a dish with meat at the bottom and top with your favorite toppings and bake until the cheese melts.
I use a copycat pizza hut recipe (not sure how much sugar is in the tomato paste/sauce). It's super easy.
8oz can of tomato sauce
1/2 - 1 tsp depending on how your taste it of oregano, basil, marjoram, salt, sugar (optional), and I add a pinch of cayenne pepper (like Domino's). Let it simmer for about 20 minutes.
If you like Olive Garden try Paleo Zuppa Toscana. I use coconut milk instead of heavy whipping cream.

I also make the this without the beans and pasta. You may want to cut this back a lot because even half of this makes a ton of soup.

Broccoli / cauliflower salad---the kind with bacon and shredded cheese in it. Most green vegetables are low-carb. Cottage cheese, nuts, egg salad, shrimp, tuna, any fish, using lettuce leaves as roll-ups. A variation would be to try to do "No sugar / No flour." A similar premise, but gives a person a little more variety in the food choices. It parallels a clean eating eating plan, just cuts out most of the processed foods.0

So for the past few weeks I've been on a low carb diet and honestly I'm getting tired of my recipes. Does anyone have any tasty low carb diet recipes or know websites? There's only so much salad and chicken I can eat haha.
I found a recipe for a low carb sheppards pie using Cauliflower instead of potato's . It really was quite tasty, even the hubs liked it !!!0 -

I just use a low carbs tortilla she'll for pizzas and my whole family will eat them.
I also really like zucchini steamed or cooked in garlic infused olive oil with some Italian seasoning. I use it instead of noodles with spaghetti sauce and sprinkle with Parmesan cheese.0 -

For breakfast I use two really thin pieces of ham
Put them in the bottom of a small bowl so they make a cup shape. Crack one egg and sprinkle with Parmesan cheese. Microwave till egg is just cooked solid. It pops out all together. I place it on a piece of paper towel and eat on the way tob work like a breakfast sandwich. In my microwave it takes 1 min 40 seconds but my microwave is easily 30 years old lol0
