    Slow Cooker Stuffed Peppers

    4 Bell Peppers
    2 cans black beans
    1 c rice
    1 can diced tomatoes
    2T ketchup

-mix last 4 ingredients in a bowl
    -stuff mix into peppers
-cook on low heat in slow cooker for 6-8 hours

*I typically make this w/ ground beef, but black beans would work fine.

    1 can drained chickpeas
Any seasoning - I use garlic salt and rosemary

Put chickpeas in bowl w/ seasoning and toss to coat. Spread on greased cookie sheet and bake @ 450 degrees for 1 hour. A yummy, crunchy treat!

I did this and ended up with a smoky oven full of burnt chickpeas  I think you meant 350 degrees, not 450

Made this today and loved it! I need to name it. If you make and like, let me know if you name it :) it's more than five but can be altered to be five -only....

All of this is to taste, I like mine lemony...

Kale, chick peas, onion, garlic, tomatoes (sautéed with olive oil and lemon juice)

Sauté Kale, onion, garlic, chick peas w/ olive oil and the juice of one or two lemons

When close to done, add chopped tomatoes

    Colorful and delicious!

tishtash - how much of the spice blend? like 1 tsp of each ingredient? please let me know i really want to try this!

srry totally didnt see this question! I use the following

1/4 tspn salt ( i have to watch my sodium so you could use more)
    1 tspn garlic powder
    1 tspn cumin
    1/4 tspn paprika
    1/8 tspn chili or cayene

use mini muffin tins if baking in the oven as they come out less dry. If frying form into patties rather than balls.

Someone else recently posted a falafel recipe similar but she puts cubes of feta into each one before cooking. I think this sounds like a great idea and plan on trying it out this week sometime.

    Avocado Soup

2 ripe Hass avocados, coarsely chopped
    2 cups baby spinach
2 cups low sodium vegetable broth
    juice of 1 lime
    1/2 teaspoon salt

Voila.....no chickpeas....but it's delicious and only 5 ingredients, unless you want to add pepper, then it's six. Seven if you decide to add hot sauce!
BTW: put in the blender, blend, serve.

    Bagged broccoli coleslaw
    Chickpeas drained and rinsed
Snowpeas or sugar snap peas diced
Plain greek yogurt (according to desired consistency, approx 3/4 cup)
    Apple cider vinegar (about 3tbsp)

Mix, set aside and let marry for a few hours in the fridge. I garnish mine with almond slices, blue cheese crumbles and dried cranberries for added zest.
