HELP! Desperate for Keto friendly sides...

Hello all! I love to cook and my husband and I are very happy on the keto diet. The problem is that he is SUPER picky. I love spinach, zucchini, salad etc. He hates almost all keto friendly veggies. No broccoli, no squash, no spinach, no cauliflower... I am going crazy trying to find some sort of side that I can serve him along with our yummy meats and entrees. Prior to the diet, he loved corn, potatoes, lima beans, baked beans, peas, tomatoes, olives. Anybody out there have any secret recipes or new ideas that will help me?

If you take the zucchini and squash and shred them into noodles, then cover them in a keto friendly sauce, they don't taste much like vegetables anymore and he may like them more.1

We like salads in the summer. Add some cheese or olives to almost any salad and my husband is good. Cooked veg, we like stir fried cabbage with different flavouring, hot and spicy, or not. Tomatoes, olives and cheese make a good salad too. Green beans with toasted almonds a fav; zucchini almost anyway, zoodles, breaded, grilled, boiled and served with lots of butter, bok choy cooked with a little soy sauce, Cucumber salad, that's about all off the top of my head. Hemp hearts with veggies mixed in is another go to. A mixed grill with onion, red pepper, zucchini, etc is hard to beat too.
