I cured and smoked a lovely hunk of bacon this week, brown sugar, bay leaves, garlic and juniper berry. My last lot was a maple/coffee cure, it was amazing with waffles.1

Oh I can't stand crispy bacon, give it to me barely cooked and juicy! Love it in a sandwich with butter and ketchup so the fat and butter and ketchup all run together.
I'm going to need a cold shower thinking about that.2 -

Smoked back bacon cooked until it's crisp around the edges but still retains some chew. I can't stand it when bacon is cooked to the point of shattering when you bite into it. Gross.
Mattessons smoked turkey bacon is good too, and Sainsbury's store brand frozen vegetarian bacon is not bad for what it is.0 -
