    I like Thai seafood sauce. You can get it commercially in bottles. I get Maesri brand but here is a homemade version.

    I add a tablespoon or more of finely chopped, roasted habenero pepper to a small jar of peach preserves and use that to season my salmon (I like it on pork too). Salmon is a fish that does well with sweet and/or spicy seasonings. If I don't want the added sugar from the preserves, I use MCCORMICK® GRILL MATES® SMOKEHOUSE MAPLE SEASONING.

    I bake my fish at 400 for 15 minutes, longer if really thick. Directions are:

    I pat the filet dry, then sprinkle with salt, pepper, onion powder, garlic powder and smoked paprika. I dab with small pats of butter.

    When done, squeeze a 1/4 fresh lemon over it. Delicious and tender.
