Having trouble eating

I'm new at this diet thing. I'm a big guy, started about 10 days ago at 503 lbs my nutritional list says I should now eat less than 3000 calories and My Fitness Pro I should be 3030 calories per day. But now that I'm the diet state of mind, I can't manage to eat all the calories. I'm almost under 1700 left.
So far I have lost 9lbs the first week
Do I have to eat them all?

YAAAS eat all the food... You don't HAVE to of course, but food is amazing1

muffins (bran, blueberry, banana nut, etc.)
potatoes (sweet, red, gold, purple, white, etc.)

No ýou don't have to, but don't get into restricting yourself so much then you crash and burn
I would love to have that calorie amount and still be able to lose weight

Make sure you are accurately logging. If you don't have food scales get some and weigh your food. You didn't get to 503lbs by eating less than 3030 calories in a day.1
