OK Thanksgiving is over and you have leftover turkey and Ham. Need ideas for meals that won't break my calorie deficit. Trying to keep carbs down and don't really care for baked sweet potatoes

No end of recipes for making use of turkey leftovers. Just Google for ideas.
The most wasteful thing to do is to throw the bones out. Toss all of the bones, including the aleady eaten wing/leg/thigh bones, if any, and scraps in a big pot w/onions, carrots & celery and make a broth, which can be used in any recipe calling for chicken broth.
Just toss out the bones and flavorless meat & veggies afterward. Should make at least a 2-4 quarts of broth. You can add leftover chunks of turkey along w/beans, pasta and/or fresh veggies of your chioce to make a soup.
I just reheat any leftover meat in left over gravy and serve it as a main course w/the normal sides, OR cut it up and add it to ramen OR just eat it cold, as is, straight out of the frig as a snack. You can, of course, freeze any leftovers that you don't think you'll eat right away.

We usually do soup, pot pie, and use it in stir fried and things, but I made these croquettes several years in a row and they're awesome.

We ordered a fried turkey from a hot chicken place. It was awesome.

I put it in my freezer. Next month I will be making turkey Shepard's pie.
Add the meat to salads, eggs or soup.

I like making wraps with it. I took an Ole xTreme Wellness wrap and put some homemade, low sugar cranberry sauce on it. Then I put some shredded turkey breast in a bowl with 2tbls of low fat Greek yogurt and Dijion mustard, salt, and pepper. Mix and then put in on top of the cranberry sauce and then I topped off with some fresh arugula. I wrapped and then I ate mine with a little bit of sriracha. I'll do it again for dinner tonight.2

Turkey-cranberry salad. Combine shredded turkey, Greek yogurt, dried cranberries or cranberry sauce and walnuts.

I do chicken noodle soup for the end of a roasted chicken. Boil the carcass with an onion (whole) and carrot. Drain and keep the meat and liquors. Then add chopped veg (any you like) with some chillies or chilli flakes, ginger, garlic and a packet of instant noodles plus the chicken seasoning (if that is the flavour). Simmer and serve.0

I think I'm going to make soup, too -- turkey, carrots, onions, mushrooms, celery, stock, and maybe some noodles or potatoes. I also really like turkey on salads.0

A good way to heat up the leftover turkey to have it still moist and wonderful is to use a steamer basket and just heat slices and chunks of it over water. Lovely.1

Made a stew with gnocchi accompanied by my version of Bay cheddar biscuits on Black Friday and turkey cakes (like crab cakes) yesterday.

Turkey isn't high cal at all, so the issue isn't calories, but perhaps boredom. The others have lots of ideas that will help with that. Personally, I love turkey, so am happy to just have it as my protein dish with whatever sides I might normally have (potatoes or sweet potatoes, lots of veg, if you want to lower carbs -- I am not interested in that -- use other root veg instead of the tubers).
I don't do ham on Thanksgiving or much at all, but both it and turkey could be good in a bean or lentil stew. I might try a pasta with a sauce of brussels and ham for a take on the usual brussels/bacon combo, but I suppose that involves carbs.
Turkey with cranberry sauce makes for a delicious sandwich (add salad or veg on the side), but again not low carb.0 -
I just chop my leftover turkey up, measure it into ziploc bags, and freeze for when I need to make soup.
This is the first year I didn't use the carcass to make stock, but I usually do that too.1 -
It's turkey. In many/most cases, you can use it like you do chicken.

I ran this year's leftover turkey through a food processor until crumbled and added it into this Tex-Mex rice with kidney beans recipe.
Also added a little cinnamon, a can of Rotel and frozen corn.

The cooking sites are awash in turkey leftovers suggestions. Just google 'turkey leftovers recipe' and you will find a zillion.
And do consider dividing the leftover turkey or ham into meal-sized leftovers and freeze. To make it easy, get zip bags in two sizes: sandwich (or snack for one serving) and gallon. Use your scale to fill the little bags. Throw the filled little ones in the big one and toss in the freezer. Easy access to the meat portion of many meals to come!1 -
Two Thanksgiving rituals that I uphold:
1) Friday morning, saute some diced onion with chopped turkey (white and dark) and the same herbs you seasoned the turkey with (rosemary, sage, thyme, etc.) then pour scrambled eggs in and blend til cooked.
2) Sliced turkey breast, a slice of refrigerated stuffing, and a spoonful of cranberry sauce, on a really good whole grain bread, with plenty of mayo, salt and pepper.
