Christmas Baking:
Just started on the cookies, cake should be ready later.

Now what is it with Christmas cookies? Are they a certain sort of biscuit or are they just decorated festively? We don't do them in the UK.
Here are very UK mince pies the kids (4 & 9) made earlier in the week though - yum!

Pics of my gingerbread without ginger, chocolate toffee meringue bombs and melt in your mouth sugar cookies. I've several types of shortbread too and I plan on making a pound cake

The meringues are crispy and basically melt as you eat them. They have Skor bars chopped up in them which I was told aren't available in the states so basically Heath bars.

Beautiful goodies like this never get made in my house, unless I do it. Since I have to work too, there is never enough time for yumies like this... I dont know why non of the women in my life, feel the need to do nice stuff like this around the holidays. WTF0

My cookies won the office cookie swap award. Aka a $25 debit card. Which I used to buy the cake for today's potluck.

Don't feel bad. Not everyone bakes. I know someone who is a fantastic cook and won't get near baking. It's a phobia for some people because cooking is much more forgiving than baking when it comes to measurements.1 -

How do you even?
The pie filling requires cooking or do you use can?
The crust has to be handled quickly and with cold butter on a cold surface.
Then the edges cook faster than the rest, so you have to make accommodation for that.
It all seems too sensitive to me.
How long does all that take?

I made my first iced chocolate sugar cookies this year that taste great but not Southern Living Magazine worthy.. oh well I get try again next year.2 -

I only ever make my own fillings. I'm picky.
I'll make the filling ahead or use raw
The fat ia both botter and lard.

I've been trying this cookie for the past two years. Still haven't figured it out (first I couldn't find the red, then the base broke. After that is was a hot mess):
