    I prep roasted veggies on sundays and have them with eggs or sausage or chicken for breakfast or lunch. Otherwise, I eat raw veggies with a hard boiled egg and a few berries after my morning workout. I also eat leftover dinner after workouts often.

    Hot veggies with cold cottage cheese sounds just absurd, but I'm going to try it anyway. I put cottage cheese in veggie soup sometimes, so I know the flavors pair well. I'm going to try zucchini and red peppers first.

    I used to make asparagus baked egg "muffins" and zucchini muffins (savory or sweet) are delicious.

    Excuse the calories, I had a 3+ hour hike today. ^_^

    Omelet!! It was FANTASTIC, btw. (I also added some taco seasoning. Just a bit.)

    I've started incorporating leaves into my diet. Lots of good vitamins in them!


    (To anyone wondering, 2500 is my maintenance intake. I like seeing what's left over :))

    Smoothies. I make a smoothie every morning with lots of kale, bananas, strawberries and almond milk. It is a perfect way to get veggies in.

    i make tofu scramble alot the tofu is only 110cals sometimes i add other veggies to it as well
