I mix half and half with real pasta. Even my hubby likes it that way. I would miss the chewy texture of real pasta if I had plain spiralized vegetable. I like the additional crunch of having 50% veg.

I just got my second spiralizer today and a vertical feed spiralizer was a revelation. Much easier to do hard vegetables like butternut squash than my old horizontal feed model. Smaller footprint on the countertop. No vegetable wastage compared to my old horizontal feed model that left an unspiralized pencil shaped core.

If you are doing the half and half mix you could drop the veg in the water just before draining to help mix the pasta and veg. An alternative is microwaving the veg for a minute while the pasta cooks (depending on how fine you spiralize) before mixing with sauce and real pasta. My hubby prefers parboiling the spiralized vegetables for a few seconds in the pasta water and lifting it out with before doing the psta.

I've never had zoodles, but spaghetti squash is delicious! Try it.

I did not take the time to read all the previous posts so I apologize if I'm repeating something. First of all that zucchini lasagna looks amazing I have made it before... so good. And as far as zoodles go use a very small amount of olive oil and sauteed them only 2 min anything longer than that and they are mush! Good luck zoodles are a new fave and I'm an italian pasta lover!

I can never get my zoodles right either! I started getting bags of broccoli slaw ( I find them at most grocery stores), lightly spray the pan with Pam (or cooking spray), add salt, pepper, and whatever seasoning you like, and cook until they are geeen and tender! It's so similar to zoodles just way less frustration! :)

That is a good idea. I will try that.

I haven't found a good way, yet. Ugh. I want to like them. I really do, but I can't get them the right consistency. I finally gave up and just went back to sautéing sliced zucchini and putting my chicken and marinara over that. Lol

    Following to get some ideas.

    That part.
