So my weight went from 59.8kg to 60.3kg then 61.2kg in two days and it has stayed there for almost 11 days, I thought it was water but now I am worried. I'm eating one meal a day and just veg as snacks and it's not budging. It is possible to gain fat that quick?

You're eating 500 cals a day?2 -
You're eating 500-600 calories a day? That's desperately unhealthy. No, it sure isn't going to be fat, you're not eating enough to sustain a 5 year old.5

I'm worried about you. You have been obsessing over a similar weight for over a year (http://community.myfitnesspal.com/en/discussion/10401327/weight-gain-water-and-generally-feeling-rubbish), but you keep coming back asking about fluctuating by a kilo or two which you keep being told is perfectly normal for dozens of reasons.
Are you still vegan? (http://community.myfitnesspal.com/en/discussion/comment/36489566#Comment_36489566).
Do you still have the virus from 4 days ago? (http://community.myfitnesspal.com/en/discussion/10558075/weight-gain-with-a-virus).
Could it still be from the injection you had last month? (http://community.myfitnesspal.com/en/discussion/10538894/steroid-inexjtins-and-weight-gain)
Have you only been eating 500 calories a day for the past year? I think it's about time you went to speak to a professional to help you, I don't think MFP people can help you anymore as you aren't listening to them. Good luck with your worries, please get some help.

You can be 100% assured that OP is not building muscle eating 500 calories a day. Nor is she gaining fat. She's systematically starving and damaging herself.1 -

What are your goals/stats? How tall are you and how much weight are you trying to lose?0

She said the poster won't be gaining fat at 500 calorie intake.
OP, if you are actually eating 500-600 calories per day, you are risking damage to your bones, muscles, and organs. Eat a reasonable goal and have some patience0
