I love doing a chopped veggie salad with a can of tuna, olive oil, and balsamic or red wine vinegar1

Sounds crazy, but I make my salad with romaine, and I cut up a 2% low fat string cheese, some Perdue Short Cuts chicken, grape tomatoes, cucumber, kosher dill pickles, and black olives. I hardly need any dressing because the pickles add SO much flavor. Even got my daughter to try it and she loves it. I use Brianna's Real French Vinaigrette Dressing, maybe 1 tbsp is all I need.3

Edamame beans. You can buy frozen ones and thaw your portion by running then under cold water right before adding them to your salad1

Agreed. 1oz of feta cheese feels like a devilish cheat but it's not bad for you at all! I add in some avocado, too, which makes it SUPER creamy.
Love hard boiled eggs in mine. Much easier prep than chicken.1 -

Raspberries, blackberries, strawberries or blueberries. Small amount 0.5-1 oz goat cheese and grilled chicken or shrimp. For crunchies, I add slivered almonds and/or cucumbers. Between the juicy berries and the creamy goat cheese (or avocado), I rarely need dressing.0

Beans, greens, potatoes, tomatoes, ham, turkey, yams, lamb... Ok ok I'm sorry, I couldn't help it. Sliced almonds, Craisins, red onion, feta, chopped dates, goat cheese, avocado, grilled or sauteed chicken chunks, grilled shrimp.1

I eat a lunch salad several times a week that is romaine lettuce, shredded carrots, tomatoes, hard-boiled egg, dry roasted peanuts, a pouch of sweet & spicy tuna and 2 T of a skinny homemade Ranch dressing. I get about 35 g of protein for about 400 calories, and it is so crunchy and delicious.0
