Yes but it depends how finely scrambled the egg is. Lots of little pieces falling out of the sandwich is not fun.0 -
I’m not supposed to eat bread/gluten there goes the sandwich.... but I like egg whites mixed with salsa or tomatoes yum!0

Bake them in a muffin tin. They fit nicely on a toasted English muffin.0

Eggs, onions, peppers, mushrooms, meat (pork sausage, bacon, venison sausage, ham, chicken...whatever is on hand), cheese, spicy seasoning, a big splash of Sriracha sauce and rolled in flatbread.2

I make them a lot for lunch, in fact I just had one. I do two eggs and usually some red bell pepper and avocado, maybe some tomato, some kind of meat (usually ham or turkey but I didn't have that today so I just threw in some leftover taco meat), and sometimes I add cheese. I scramble it all together and put some of it on an English muffin and just eat whatever is left over by itself.0

This thread inspired me to make one of these today.
Whole wheat bread, 1 tbsp mayo, 1 small avocado, iceberg lettuce and 2 large scrambled eggs seasoned w/s&p. Had some tomatoes that I forgot to add but didn't need them.
It tasted great. Logged in at 580 cals, which is about what I normally eat for breakfast. Only drank black coffee w/it for a total of 585.1 -

Eggs are very important in my diet due being a pescetarian and not eating seafood everyday,,, Love them...egg sandwich are great. I don't eat egg sandwiches often, but use eggs often. lol ... lol @ all who are focusing on pieces of eggs falling out of a sandwich. Find that hilarious. No negativity intended. lol0

I eat an open top scrambled egg sandwich with 1/2 a bagel or 1 waffle, toasted with cheese and mayo, very yummy, if the egg is just right, you can spread it on the waffle like any smear, you do have to hold it level though0

I actually just made turkey sausage and egg on bagel thins for dinner. Put cheese on my roommates but not mine.0

I made one this morning. Sauteed lacinato kale and red bell pepper in olive oil. Added an egg to it to scramble them all together. Poured into a tortilla. Yummy.
If I’m making a sandwich on regular bread, I prefer fried of sunnyside. Add some arrugala and alioli and cheese. Mmmmmmm.0 -
Breakfast taco! Scrambled eggs with veggies in a corn tortilla. Add salsa, avocado and cilantro. Kind of a like a sandwich, but the tortilla holds it all in place.0

Fried with runny yolk and bacon for me. Add in some butter and make sure to use plate to catch any mess. Wiping down plate with last bits of bread...*kitten* yum!1

Yum. Buttered toast, scrambled eggs, bbq sauce, sometimes bacon, another piece of buttered toast on top. Deeeelicious.
I find that the toast option actually keeps it a bit tidier too as the crispy crusts act as a lip on the sandwich.0 -
I actually eat these after I work out I add sliced avocado ..0
