Increasing healthy calorie/nutrition count

I'm attempting to reverse insulin resistance and slowing the rate my body produces cholesterol (under my doctor's supervision). Since starting this I've recorded EVERYTHING I eat and have only hit 1200 calories once in two weeks, the rest of the time I'm at least 250-300 under, which ha's also made me under nutrients. I have been meal planning faithfully but can't figure out how to get it right. Ideas?

Are you including the healthy fats that tend to improve lipid levels, like avocados and nuts?
