And an even lower calorie version: 65 calories each, makes 12:
12 vanilla wafers
4 oz. 1/3 less fat cream cheese
4 oz plain non fat Greek yogurt
1/4 cup sugar
1 egg
1 teasp. vanilla extract
Preheat oven to 325 F
Place 12 cupcake papers in muffin tins
Place a vanilla wafer in each paper, flat side down.
combine cream cheese, yogurt, and sugar in a mixing bowl. Beat on medium speed, add egg and vanilla. Beat until very smooth. Spoon a scant 1/4 cup of batter into each cupcake paper to make 12. Bake about 20 minutes. cool and refrigerate. Can top each with a teaspoon of fruit spread, jam or apple or pumpkin butter, not included in calorie count.

Cool! WIll try soon. I have never made cheesecake before, but I am sure it doesn't hurt to try. Normally I make low calorie muffins. Peanut butter cup cheese cake bites: about 100 calories each, makes 12:
Set out muffin tins to make 12. Place a cupcake paper in each. Place a vanilla wafer in the bottom of each paper. (They are making vanilla wafers smaller these days, so it will not fill the bottom of the paper- it works anyway).
Preheat oven to 325.
In a medium bowl combine 1/4 cup sugar, 8 oz of nonfat plain Greek yogurt, 1/4 cup of creamy peanut butter, and 1 large egg. Whisk together to make smooth batter. Spoon about 2 tablespoons of batter over each vanilla wafer to cover. Divide the batter evenly over the 12 wafers. Bake for 25 min. Remove from heat and while still hot place 3 Ghiradelli 60 % cocoa chocolate chips on each mini. When chips start to melt smooth over top of each mini with the back of a small spoon. Let cool and then chill in fridge.0 -
