So, thinking about the need to lose fat but want to gain strength. Saw a YouTube video that stated that circuit training doesn’t necessarily build muscle. Ok fine. So if you circuit train what’s your routine? Also, on your exercises, what amount of weight you use for each?

You can follow a non-circuit routine to gain strength and muscle, and focus on diet for fat loss. You still have to pay attention to your diet for fat loss even doing circuit training.
As for the amount of weight, pick a weight you think you can handle for the amount of repetitions; if you feel like you could have done a lot more reps with it, try a heavier weight, and vice-versa.

I was going to focus on diet for fat loss also. I just read that circuit training is a go to for fat loss and calorie burn.

I used to do circuit classes at the gym when I first joined and wanted to lose weight. It was a nice class, I enjoyed it, it was challenging. We just went around and used whatever equipment there was in the circuit room and also the instructor would get us doing burpees and other stuff to get the heart rate up before the circuit and in the middle of the session.

As for weight loss though, it didn't happen because I was still eating heaps. I was maintaining though to be fair. I hadn't discovered CICO yet.

As for building muscle? I'm not sure, I was too fat to see any muscle, however, I did become quite fit! I got stronger for sure and was one of the fittest people in the class (as in not dying and keeping up) after a while. So it was good. If i'd shut my mouth at the same time i'm sure I would have lost weight too!

That's one of the myths the fitness industry promotes, along with doing "HIIT" cardio to burn fat. A hundred calories burned doing circuit training or cardio is the same as eating a hundred fewer calories. So it's best to choose exercises based on fitness goals, not fat loss. For building strength, circuit training isn't the best, since you don't rest long enough between sets to recharge properly, plus the weight is less. Here are some good strength programs to follow: https://community.myfitnesspal.com/en/discussion/10332083/which-lifting-program-is-the-best-for-you/p1
