I just started two days ago and I have not been able to use like 400-500 calories because i did not want to go over my fats. Staying under the carbs actually and have been satisfied. I just want to know if this is ok. If not what can I eat to use up calories but no fat?

one day here and there not a big deal. regularly over time that can is becoming regular under eating that can lead to health issues over time. Or sometimes we are "FINE" under eating for a few days then we end up binging day 3-4-5 so we negate all the work done.
are you using a food scale for ALL FOODS (not cups or spoons)?
If you appetitie IS very low, and you are using a food scale and correctly logging all your calories, then look at integrading some foods that are higher calorie density to increase calories without adding bulk.
