soy protein

I was looking at cooked chicken breasts at my grocery store today and was going to buy one package just to try but an ingredient was soy protein. Why would chicken breast have that as an ingredient.

    I was curious so I’ve just done a little digging on Google and apparently soy protein concentrates are added to ‘keep meats moist and boost protein without adding fat’.

    That’s from an article about a brand called Tyson (I’m in the UK so I’m not familiar with it) but it would appear they make a few cooked chicken options possibly a frozen range? Precooked frozen chicken is not something I buy or eat (vegetarian) but I’ve seen similar products over the years and they do tend to have a coating which I’ve always figured was to help prevent freezer burn and drying out by protecting the surface of the meat - kind of like a glaze.

    2018 soybean sales to China were down 94% from the previous year so we had to do something with them.
