My Favorite Quinoa Salad-what's your favorite recipe to share?

Ingredients
1 cup cooked quinoa
1/2 cup canned black beans
1/2 cup canned sweet corn kernels
12 cherry tomatoes, quartered
1/4 red onion, chopped
3-4 mini sweet bell peppers, sliced in rings
2 Tbsp Brianna's Blush Wine vinagrette
Drain the black beans and rinse them well before adding into the salad. Drain the corn too. I cut cherry tomatoes in quarters but if using grape tomatoes I only halve them.
This makes a delicious lunch, side dish or snack and is 197 calories per serving with 33.7g carb, 3.5g fat, and 7.8g protein.

That sounds delicious! I just made portobello mushroom sandwiches the other day and they turned out amazing! Here's the recipe I used:

Sounds good! I make something similar with edamame rather than quinoa. A little feta cheese tops it off!2

French green beans
Onion
Garlic
Celery
1 can of diced tomatoes
Olive oil
1/2 low sodium chicken broth
Cook onions, celery and garlic in pan with olive oil. Add low sodium chicken broth, green beans and tomatoes, cook for 1 minute. Add shrimp and quinoa and simmer1
