beets salad

I love this time of the year, but I can't keep up with my low carb diet. So instead of stressing out, this year I've decided to try to keep a balance and keep an eye on portions but not deprive myself. Then starting January 1st, I'll go back to low carb.
That said, this beets, sweet potato salad gave me load of carbs in one small serving, but it was well worth it: https://mediterraneanlatinloveaffair.com/beets-sweet-potatoes-walnuts-salad/

I love both beets and sweet potatoes!! Any idea what other dressings would be good for this? I'm a minimalist on dressing, meaning I just do olive/oil vinegar most of the time.

    I’d also give an orange based dressing a go with those main ingredients.

    Or whip a bit of soft goat’s cheese or blue cheese into your basic vinaigrette. Or a horseradish dressing would work beautifully too.
