Would love to see recipes you have with almond flour that you love! I also have very ripe bananas...any recipes to use both together? TU!

I’d start with searching Gluten Free Banana Bread on Pinterest! Or google if you don’t have Pinterest 😉

I really like these muffins: https://runfasteatslow.com/blogs/news/superhero-muffins

I make them vegan with flax "egg" and vegan butter.

    Dutch bitterkoekjes (almond macaroons)

In a food processor blitz together 2 egg whites, 150g almond flour (or almonds), 125g sugar (or 65 g sugar, and the same volume of Splenda), a teaspoon of almond extract. Transfer to piping bag and pipe large nipples onto a silicon paper lined baking sheet. You can also use a ziplock bag with a corner cut off after filling, or you can also just spoon mixture onto the lined baking sheet. Bake about 10 minutes at 190C until golden brown.

Whole recipe takes about 15 minutes to make including the 10 minutes in the oven. Great dipped in Amaretto.

I top it with berries but you could probably add any fruit (like bananas) if you really wanted to
