Looks ok. The most crucial point though is the first. Count calories. The rest is just your personal choice, no inherent extra benefit with regards to weight loss.
I’ve bolded a little bit (and I’m sure it’s just the way you’ve worded it), but you’re aware that both honey and maple syrup are just as calorific as whatever you’re referring to as ‘caloric sweetener use sparingly’ - assuming you mean sugar?

What are your goals?
If your goals are solely weight related, then the only thing that matters is consistently hitting your calorie goal. The specific foods you eat are personal preference unless there is a medical condition involved. If you're trying to lose weight, most people eventually find that they need to weigh and log ALL their food to ensure a calorie deficit.
Regarding health, it's hard to tell from what you posted how much protein you're getting. If you are not eating much meat, dairy, or eggs--I'm making assumptions on the dairy and eggs since you are eating only vegetable fats--then you need to familiarize yourself with plant protein sources if you haven't already.
Edited to add: I took a look at your food log since it's open. Why is your calorie goal only 1000 calories per day? That is far too low for any adult.8 -

What is your height and weight? What are your goals?
If your logging is even close to accurate, you are eating quite low calorie and low protein. Regardless of what types of foods you eat, your body needs fuel (calories) and reasonable amounts of protein and fats. Typical recommendations are 0.6-1g of protein per lb of your goal body weight, and 0.3g of fat per. Unless you are quite short, lean, and sedentary, please consider eating more calories and protein if health is in fact one of your goals!6 -
My best diet:
1) Stay in a calorie deficit most days
2) Maintain my basic nutrition
3) Eat things I enjoy as often as I can

In the last few days, the most protein you've gotten (per your diary) is 50g, with some days in there in the teens/twenties. Seriously, not enough protein for anything even close to an average-sized adult woman, let alone one trying to lose weight.
Also, as others pointed out, you've set your calorie goal at 1000 calories: Not enough for even close to an average-sized adult woman, either. You eat a little over that sometimes, but still not enough.
Your profile mentions enjoying activity: Are you exercising, and not logging it, on top of eating that little?
Your profile mentions wanting to get in shape. Your nutrition based on what you log - inadequate calories, seriously inadequate protein, it looks like inadequate fat (hard to tell because you only list mono and sat fats, but those are very low), inadequate fiber often as well (25-30g minimum would be good) - that's not going to support your "get in shape" goal. Your OP talks about veggies, but some days I'm not seeing even the 5 servings that most mainstream nutritional authorities recommend as a minimum, let alone the 10 servings that some are now suggesting.
It's just not possible to get enough nutrition on ultra-low calories. Nutrition is important (so are calories).
If this sounds harsh, I'm sorry. I'm not trying to slam you here: I'm truly worried about you. There's so much junk info about dieting and nutrition in the world these days, that it's hard to find a good track.
Kimny made some good suggestions about nutritional goals, above, for starters. (You are hearing from several experienced MFP old-timers here, who've succeeded at weight loss, and are now in maintenance at a healthy weight, BTW).
With your goals, and especially if your profile photo is close to your current weight, you don't want to be losing weight fast. Go into the MFP goals settings, set it up as accurately as you can with a 0.5lb to at most 1 pound weight loss goal weekly, then eat that number of calories every day, plus a reasonable estimate of your exercise calories. Do that for 4-6 weeks, then assess results, adjusting intake if necessary to hit your sensible target loss rate. Slow and healthy is better than fast and risky.
Your aspirations in your OP are good, but there's more to it. Think of me as your anxious old MFP auntie (at 64, I'm surely old enough ): Truly, I just want to see you stay strong and healthy while you achieve your weight and fitness goals! :flowerforyou:8 -

Hopefully OP will come back to clarify, but I took the sweeteners entry to mean that, for whatever reason, OP plans to only use erythitol, stevia, maple syrup, and honey, and that of those, would only use the caloric sweeteners sparingly. Why assume ignorance on the part of OP when there is a perfectly natural way to read the passage that doesn't assume ignorance?1
